We started with a base of classic gin botanicals using Juniper and coriander in levels that allow our spirit to be instantly recognized as a gin.  We then went big with some new world flavors that compliment the dry pallet of a classic gin.  We started with big Orange peel, backed by some lemon peel, then filled the middle out with some floral notes capped with 3 different pepper ingredients.  We finished the spirit with some licorice tones to round out the gin.  We built the spirit on wheat grain neutral spirit to give us the clean, crisp background that showcases our flavor profile.

Using wheat GNS, though more expensive than corn allows us to bring the spirit up to 45.4 ab and still retain a well defined and concise flavor profile, while not overpowering our gin with ethanol.
